From field to table: our soy supply chain for tofu and tempeh
When you taste a cube of Tigusto tofu or a bite of our fermented tempeh, there's much more behind it than you might imagine. Behind every product is a transparent, local, and artisanal supply chain that begins... right here in Ticino.
A local, controlled and organic soybean
Our soy comes exclusively from Bio Suisse-certified farms in Ticino, which respect the highest standards of Swiss organic farming.
This means:
✅ No GMOs
✅ No chemical treatment
✅ Full traceability from sowing to packaging
Each batch is subjected to checks in accredited laboratories , to guarantee purity and safety.
A plant that nourishes the earth
Soy isn’t just good for us — it’s also a regenerative plant for the soil.
As a legume , soybeans naturally enrich the soil thanks to the microorganisms (so-called "nitrogen-fixing bacteria") that live in its roots.
These bacteria capture nitrogen from the air and transform it into nutrients, improving soil fertility for future crops.
Additionally, soybeans have deep, strong roots, which help improve soil structure and phosphorus availability.
A handcrafted, artisanal workmanship
At Tigusto we process around 13 tons of Ticino soy every year, mainly into fresh tofu and fermented tempeh .
But what makes our tofu unique is not just the raw material, but the way we work it .
We follow an artisanal production :

The soybeans are soaked, cooked slowly and gently

The puree is pressed by hand

We use Nigari , a natural coagulant extracted from sea salt

The coagulation process is carefully followed by artisans with long experience in tofu production.

Each block of tofu is shaped and pressed by hand
In Tigusto, machines help, but they don't replace human knowledge.
Our artisans participate in every stage of the process and never perform repetitive tasks for hours: every day is different, concrete, made of hands, attention, and taste.
