
VEGETABLE AND TOFU TART
This vegetable and tofu tart is a rustic, authentic, and surprisingly light dish. In this version, the filling is made with organic tofu, seasonal vegetables, and grated cheese, without the use of cream or eggs, but with a creamy, enveloping texture thanks to the perfect balance of ingredients. The whole-wheat spelt base further enhances the dish's natural flavor. It's ideal for a balanced lunch, a light dinner, or a picnic, served with whole-wheat bread and a fresh salad.

- 300g organic tofu, crumbled
- 1 leek, finely chopped
- 1 courgette, sliced
- 1 onion, chopped
- 2 tbsp extra virgin olive oil
- 1 wholemeal spelt puff pastry
- 50 g breadcrumbs
- 100g of grated cheese
- 4 tbsp tamari
- Salt, pepper and nutmeg
